Jicama Salad
  • 2 lbs jicama (before cleaning), cut into ¼ inch strips
  • 1 pineapple, peeled, cored, and cut into bite size pieces
  • 1 English cucumber, thinly sliced
  • 1 jalapeƱo, seeded and thinly sliced
  • Juice of about 3 limes
  • Fresh cilantro, chopped
  • Salt to taste
  • Red pepper flakes
  1. This is so easy! Just add everything to a large bowl and toss. Keep tasting to get the right balance of sweet, salty, sour, and hot. Sometimes I add a little red chili powder, but I will leave that one up to you.
