Banana Nut Bread
 
Ingredients
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups sugar
  • 3 sticks of butter, room temperature
  • 1 cup chopped walnuts or pecans
  • 3 eggs, lightly beaten
  • 2 cups mashed bananas (about 6 bananas)
  • 1-8 ounce can crushed pineapple, well drained
  • 1 cup chopped dried apricots (3 ounces)
  • 2 teaspoons vanilla extract
Instructions
  1. Grease two loaf pans and set aside.
  2. Combine the flour, baking soda, salt, and cinnamon in a small bowl, mix well and set aside.
  3. Add the sugar and softened butter to a large mixing bowl and mix well until light and fluffy.
  4. In another bowl mash the bananas (a little lumpy is ok). Add the drained crushed pineapple, apricots, chopped nuts, and vanilla to the bananas and blend thoroughly.
  5. Combine the dry ingredients and the fruit along with the eggs to the butter and sugar, and stir until evenly mixed. Do not over stir.
  6. Pour evenly in the two loaf pans.
  7. Bake at 350°F for 50-55 minutes or until a wooden pick inserted into the center comes out clean.
  8. Cool 10 minutes before removing from the pans to cool on a rack.
